一、不吃形状、颜色异常的蔬菜:
形状:颜色正常的蔬菜,一般是常规栽培,是未用激素等化学品处理的,可以放心地食用。
二、不吃“多虫”“多药”蔬菜:
在众多蔬菜中,有的蔬菜特别为害虫所青睐,可以称之为“多虫蔬菜”;有的菜害虫不大喜欢吃,,可以叫它作“少虫蔬菜”。 是由蔬菜的不同成分和气味的特异性决定的。多虫蔬菜中,“出名”的有青菜、大白菜、卷心菜、花菜等,少虫蔬菜有茼蒿、生菜、芹菜、胡萝卜、洋葱、大蒜、韭菜、大葱、香菜等。
多虫蔬菜由于害虫多,不得不经常喷药防治,势必成为污染重的“多药蔬菜”。平时应尽可能选“少虫蔬菜”。不过,在温度较低的季节,由于害虫休眠越冬,农药的喷洒也停止,这时少量食用“多虫蔬菜”也无妨。
三、不吃施肥量大的蔬菜:
由于化学肥料的施用量大,特别是氮肥(如尿素、硫酸铵等)的施用量过大,会造成蔬菜的硝酸盐污染比较严重。硝酸盐本身对人毒性并不大,但随蔬菜进入胃肠道后会被还原成为亚硝酸,亚硝酸再与胃肠道内的次级胺结合形成亚硝铵,这是一种致癌物质。
对上市蔬菜检测后发现,各种蔬菜的硝酸盐含量强弱不等,由强到弱的规律是:根菜类、薯芋类、绿叶菜类、白菜类、葱蒜类、豆类、瓜类、茄果类、食用菌类,硝酸盐含量高低相差可达数十倍。其规律是蔬菜的根、茎、叶(即营养体)的污染程度远远高于花、果、种子(即生殖体),这可能是生物界普遍存在的保护性反应。这个规律很有用,它可以指导我们正确的消费蔬菜,尽可能多吃瓜果和食用菌,如黄瓜、番茄、毛豆、香菇等。
